餐饮企业文化建设研究
——以海底捞火锅为例
【摘要】 现代餐饮企业,无论大小,都在面对越来越来激烈的市场竞争。要想在竞争中生存下来,除了要具备优质的产品和服务、优秀的管理、销售等这些显性的因素外,还有一个重要的容易被忽略的隐性因素——企业文化。餐饮文化是一个国家和民族在长期历史发展过程中逐渐形成和传承的一种饮食习惯和文化传统。我国的餐饮文化源远流长,反映了人们饮食活动过程中关于饮食品质、审美体验、情感活动、社会功能等诸多方面的独特文化意蕴。餐饮业是典型的服务行业,具有实物产品和服务产品相结合,生产与消费同时发生等特征。除了饭菜的质量和价格,消费环境、服务态度等因素都会影响消费者的购买行为。因此,餐饮行业所蕴含的文化传统以及其自身的特点决定了餐饮企业必须重视品牌文化和企业文化的塑造,并通过有效的文化营销提升企业竞争力。本文首先对餐饮企业文化进行了概述,介绍了餐饮企业文化的含义、特征、构成等方面,进而以“海底捞火锅”为例,分析在建设餐饮企业文化过程中存在的问题,并提出完善的建议。

【Abstract】 Modern catering enterprises, regardless of size, are in the face of increasingly fierce market competition. To survive in the competition, they should have quality dominant factors such as products and services, excellent management and sales. At the same time there is still an important tacit factors that easily be overlooked — the culture of the enterprise. Catering culture of a country or a nation is formed gradually and inheritance of an eating habits and cultural tradition in the long course of historical development. Chinese food culture has a long history, reflects the process of food on eating quality, aesthetic experience, emotion, social function and other aspects of the unique cultural implication. The catering industry is a typical service industry, it has a kind of characteristics that its material products are combined with its services products and the occurrence of its production and consumption are at the same time.In addition to the food quality and price, consumption environment, service attitude and other factors will also affect the consumer’s purchase behavior. Therefore, the cultural tradition of the catering industry and the characteristic of itself decided that the catering enterprises must attach importance to the brand culture and the enterprise culture, and enhance the competitiveness of the enterprises through effective cultural marketing. This paper summarizes the culture of the catering enterprises, introduces the meaning, characteristics, composition and other aspects of the culture of dining enterprise, and then analysis the questions exists in the catering enterprises culture construction process from the example of “Haidilao hotpot restaurant”, and put forward suggestions for the improvement.
