食品中山梨酸含量的测定
[摘 要]食品中添加的山梨酸超标严重,消费者长期服用,在一定程度上会抑制骨骼生长,危害肾、肝脏的健康,因此食品中山梨酸含量是一项极其重要的指标。本文采用分光光度[1-2]法测定食品中山梨酸的含量。以双氧水-硫酸溶液为山梨酸氧化体系,氧化产物丙二醛进一步与硫代巴比妥酸进行显色反应。在吸收波长530nm处,氧化反应温度60℃,显色剂用量4.0mL,0.15mol/LH2SO4溶液用量1.4mL测定效果最佳。山梨酸浓度在0~1.066µg/mL范围内呈线性相关,线性范围内吸光度与山梨酸浓度(µg/mL)间的关系为:A=0.3715c+0.0047,R2=0.9998,回收率为99.0%~101.1%。

Food in the sorbic acid content is determined
Abstract:The food additives sorbic acid exceed the standard seriously, the consumer long-term use, to a certain extent, inhibit bone growth, harmful to renal, liver health, so the content of sorbic acid in food is a very important index. This paper adopts spectrophotometer determination of sorbic acid content. Hydrogen peroxide sulfuric acid solution for sorbic acid oxidation, oxidation product malondialdehyde further and thiobarbituric acid chromogenic reaction. Inthe absorption wavelength of 530nm, oxidation temperature of 60℃, chromogenic agent4.0mL,0.15mol / LH2SO41.4mL solution dosage determination of best.concentrations in 0~ 1.066g/mL range showed a linear correlation, linear range and absorbance of sorbic acid concentration ( g/mL ) relationship is: A =0.3715c+0.0047, R2 = 0.9998, the recovery rate was 99% ~101.1%.
